It's a dark, highly aged vinegar with a complex and sweet taste and it's made from white grapes. It's generally aged anywhere from 3-25 years. The stuff that you buy in the store isn't very good on the scale of balsamic vinegar, but you'll never know since high quality stuff is ridiculously expensive. You generally drink the older stuff straight, and use the youngest in salad dressing. Of course, using balsamic vinegar as a cooking agent is highly advised since it kicks ass. Wikipedia tells me that you can use it as a topping on vanilla ice cream. I don't know about all that. _________________
