also, here's the perfect grilled cheese sandwich

sourdough bread, extra sharp cheddar, animal-fat butter, ketchup

freshly ground black pepper on the inside, and a light layer of honey dijon, or tangy brown if that's more your style on one of the interior bread sides. grill to perfection and enjoy

notice how i did not include mustard. that is because it does not belong with a grilled cheese sandwich. i don't know what you'd accomplish by putting the mustard on a grilled cheese sandwich. it's a sweet and salty combination of flavors, which can complement.. pretty much nothing except white bread and potatoes. you try doing that to a grilled cheese sandwich, you're going to overpower some of the flavors in there. most likely the butter/ketchup/pepper.

it might actually make a tiny bit of sense on a philly cheesesteak, if it didn't come slathered in hotly grilled onions. again, the meat and cheese are salty enough and you don't need any more sweetness with the onions, so the mustard pretty much just throws off the balance of the flavor of the entire sandwich. i can't believe i'm having to explain this to you guys.

also, mustard is fucking horrid and you should be ashamed of yourself if you prefer it over ketchup. there are a lot of different types out there. branch out! experiment! but above all, stop putting garbage condiments on garbage food. PLEASE.
