There's a lot to do, but what I'd recommend? Take a train or bus and go hiking. The part of Korea that I found the most beautiful were some of the mountains and shrines that were pretty out of the way. If you're not staying very long? I'd just say get tanked. Maybe try and find some hookers. My roommates certainly had no problems with the latter two options.
